I am not a master at church interiors by a long shot...I am beginning to realize though: Tripod a must & 7,9 or 11 exposures @ 1 step goes a long way for a smoother transition of light/dark areas & therefore increasing the details...

Graham (Inkslinger) is right I believe. Such interiors often take several stops (ev) to cover the full dynamic range.
